The evening is a fundraiser with the money raised going towards purchasing Why Leave Town Cards select community groups can pass on to locals as a form of support this Christmas.
The idea for the dinner and a special cookbook containing old and new recipes was the brainchild of Nola Brady.
"The Community Cookbook and Charity Dinner were inspired after rummaging through friends and family recipes for Christmas last year.
"There was a booklet amongst the recipes from the 'Bombala Torchbearers for Legacy Lamb and Wine Tasting Dinner' that was held at the Bombala RSL in 1971," Ms Brady said.
The book contained the recipes that had been served at the dinner, a celebration of lamb and it is thought could have been one of the very first degustation style dinners.
"It was at that time the idea for a modern Lamb and Wine Tasting degustation dinner to raise money for charity came to mind.
"Looking at some of the beautiful handwritten recipes that show signs of love from food stains and worn pages, the tradition of keeping these recipes alive and mingling with some current day traditions became important.
"The book also has photos from around the region and contains all the recipes for Saturday nights six course dinner as well as photos of the old handwritten recipes.
"I was selling the books at the Bombala Rotary Markets on Saturday morning and we will be selling them at Saturday nights dinner," Ms Brady said.
The 2019 Community Fundraising Cookbook is $15 per copy and is available through the Bombala Chamber of Commerce.
"We have had 200 copies of the book produced at a cost of $6.20 each, which means $8.80 per book will go into the charity fund.
The Charity Dinner at the Delegate Showground on Saturday is a six course degustation dinner with a glass of wine matched to five of the courses.
The evening starts with appetisers and pre-dinner drinks with tea and coffee served with the sixth course.
"Food is symbiotic of love when words are inadequate."
